A rump roast is a cut of beef from the top of the back end of a cow, as far back as you can go before reaching the tail. The entire rump and top of the back leg is called the round, but only the top is rump. Rump roast can easily be cooked unattended in an oven or slow cooker. It’s a good choice when you want to make pot roast, and leftovers are perfect for hot sandwiches with gravy or BBQ sauce. You can also cook it low and slow in chunks to make beef stew. If you own a dehydrator and enjoy making beef jerky, rump roast is one of the best cuts you can choose: less fat means less prep time devoted to trimming and very flavorful beef.
